MASHED SWEDE Boil the diced swede for about 15 minutes or until tender. Mash it. Add butter if you like. Calories: one cupful will weigh about 4 oz or 100 grams and (without butter) will contain about 12 calories. CURRIED MASHED SWEDE As above but add some curry powder. SWEDE SURPRISE Diced swede on a bed of mashed swede decorated with piped swede rosettes and garnished with a sprig of parsley. (Don't eat the parsley if you are a serious dieter.) BASHED SWEDE Bashed swede (known as bashed neeps) is Scotland's traditional accompaniment to haggis. The swede was brought to Scotland in the 18th century by Patrick Miller, a director of the Bank of Scotland and a friend of King Gustav III of Sweden. Gustav presented Miller with a diamond-encrusted snuffbox containing a pinch of swede seed. The snuffbox is on display at the British Museum in London. The recipe for bashed neeps is the same as the recipe for mashed swede. |
